In efforts to add more veggies into my diet, I have tried preparing my vegetables using non-traditional coking techniques. The outcome: a new found appreciation for vegetables! Not only are the vitamins and minerals they provide advantageous to your health, but they taste amazing!!! Here is my latest vegetable transformation, Zucchini Fries.
1 cup plain bread crumbs
1/2 cub grated parmesan cheese (my favorite)
Prep: Preheat oven to 375º F. Cut ends off the zucchini and proceed to cut them length wise into spears. (My spears were 3 inches long) Whisk your 2 eggs in a bowl and dip your spears into the whisked eggs.
Dredge your egg washed spears through the bread crumb and parmesan mixture.
Place the spears onto a tinfoil lined cookie sheet.
Drizzle EVOO onto the spears and bake for 20 – 25 minutes or until desired golden color.
ENJOY! These fries are delicious alone but can be enjoyed with a side of marinara sauce, honey mustard or (for those of you who enjoy it) ketchup.
